In the meantime, here’s a sample of just one of the fantastic recipes in the 14-day menu. This delicious salad is all about flavor and texture; the balsamic vinegar a counterpoint to the sweet/sour of the grapefruit. Let us know what you think in the comments below!
Avocado Citrus Balsamic Salad
Serving size: 2
- ½ avocado
- ½ pink grapefruit
- ½ small onions, slivered
- Handful of spinach
- Balsamic glaze
- 3 ounces of soft goat cheese
Cut the avocado in half and scoop it out gently, as close to the skin as possible. Slice avocado the long way. Skin the grapefruit by cutting down the sides and cutting off the ends. Cut grapefruit in half, then slice. Lay down a bed of spinach onto the plate. Lay down alternating slices of avocado and grapefruit. Place slivered onions on the sides of the salad. Drizzle olive oil then glaze on salad. Sprinkle goat cheese on top and serve.
